Supreme Sun-Dried Vegan Bowl
Well, I’m certainly no chef, but I have been a vegan for the last year and I did JUST figure out the world of Pinterest and how to get my own recipes on there!
I get asked SO OFTEN for recipe ideas and quick meal-prep ideas from my clients. While many of us wrestle with mindset issues around food, nutrition or a healthy lifestyle, many of us also just need some good ol’ practical recipes that are simple and to the point.
I made this recipe up this weekend and LOVED it.
I had trouble knowing what to name it, so I went with my tastebuds! It reminds me of a supreme pizza mixed with a taco bowl.
I hope you love it as much as I did!
Supreme Sun-Dried Vegan Bowl
Ingredients:
2 cloves garlic
3-4 Green onion sliced
1 Green Pepper (sliced or cubed)
6-7 Sun dried tomatoes
6 cherry tomatoes whole
1 1/2 cup Black Beans
1/2 cup cooked rice
Red Pepper Flakes
Instructions:
Sauté garlic, green onion, green pepper until they start to brown.
Add cherry tomatoes, olives and sun-dried tomatoes and wait until tomatoes begin to pop and all veggies get a little brown.
Add black beans and cooked rice, mix and let it heat for a few minutes before eating.
Sprinkle with red pepper flakes.
I might experiment with zoodles (instead of rice) or add cilantro next time!
