Simply Irresistible Quinoa Breakfast Bowl
Serves 2 Prep Time: 10 minutes Cook Time: 11 minutes
Ingredients:
olive oil
1 cup dried quinoa (any variety)
2-3 garlic cloves (minced)
1 cup grape tomatoes (halved)
1 cup kale (deboned and roughly chopped)
1 cup black beans or chickpeas (drained and rinsed)
dash of salt
dash of pepper
Directions:
- Cook quinoa in a small pot according to instructions for quinoa.
- Heat skillet on medium/medium-high heat with oil. Once pan is hot, add garlic and heat until fragrant.
- Add tomatoes, salt and pepper. Cook for 2-3 minutes until tomatoes start to blister.
- Then add kale, basil and beans and mix well. Frequently rotate the ingredients for 2 minutes or until kale is lightly charred and ingredients are heated through.
- Portion out desired amount of quinoa in bowl and top with sautéed combination.
- Feel free to add toppers like avocado or hummus to finish off the meal with a healthy fat.
