Everyday Breakfast Goodness

Serves 2-3 Prep Time: 5 minutes Cook Time: 15 minutes

Ingredients:
olive oil
2 sweet peppers (chopped)
4 green onion (chopped)
3 garlic cloves (minced)
6-8 baby bella mushrooms (sliced)
4 campari tomatoes (diced)
1 can black beans (drained and rinsed)
pinch of fresh basil (chopped)
dash of salt
dash of pepper
2 large handfuls of kale (deboned and roughly chopped)

Directions:

  1. Saute oil, sweet peppers, green onion, garlic for 3-5 minutes
  2. Add mushrooms and tomatoes, black beans, basil, salt and pepper. Saute until mushrooms and sweet peppers are soft and cooked (about 5 minutes).
  3. Add kale and cover mixture to simmer until kale wilts (about 3-5 minutes)
