Simply Irresistible Quinoa Breakfast Bowl

Serves 2 Prep Time: 10 minutes Cook Time: 11 minutes

Ingredients:
olive oil
1 cup dried quinoa (any variety)
2-3 garlic cloves (minced)
1 cup grape tomatoes (halved)
1 cup kale (deboned and roughly chopped)
1 cup black beans or chickpeas (drained and rinsed)
dash of salt
dash of pepper

Directions:

  1. Cook quinoa in a small pot according to instructions for quinoa.
  2. Heat skillet on medium/medium-high heat with oil. Once pan is hot, add garlic and heat until fragrant.
  3. Add tomatoes, salt and pepper. Cook for 2-3 minutes until tomatoes start to blister.
  4. Then add kale, basil and beans and mix well. Frequently rotate the ingredients for 2 minutes or until kale is lightly charred and ingredients are heated through.
  5. Portion out desired amount of quinoa in bowl and top with sautéed combination.
  6. Feel free to add toppers like avocado or hummus to finish off the meal with a healthy fat.
