All-Natural Sweet Vegan BBQ Sauce
Ingredients:
4 medium tomatoes
1 onion
3 cloves garlic
1 fuji apple (do not peel, but core the apple)
1/4 tsp cayenne
1 tsp chili powder
1 tsp coriander
1/2 tsp paprika
1/2 tsp salt
pinch of pepper
1 bay leaf
1/2 tbsp coconut aminos
1/2 tsp balsamic vinegar
2 tbsp raw apple cider vinegar
3 tbsp agave nectar
Directions:
- Chop tomatoes, onion, garlic and apple in food processor to chop and dice ingredients to chunks.
- Combine all ingredients in a pot on medium or medium low heat (where it won’t burn or boil, but just simmer). Cover and simmer for about 30-40 minutes.
- At this point, ingredients should be well cooked look more like a chunky sauce. Turn off the heat, remove the bay leaf.
- Either enjoy as is or blend the sauce with a hand blender or place it in the refrigerator or freezer for a short time until it cools a bit and then blend it in a regular blender for a smoother sauce.
- Pour it on sautéed or grilled potatoes and vegetables with a veggie burger and corn on the cob, or even enjoy it on whole wheat pasta.
