Leeks of Love
Serves 2 Prep Time: 5 minutes Cook Time: 12 minutes
Ingredients:
1 leek (thin sliced)
1 sweet pepper (chopped)
3 garlic cloves (minced)
dash of salt
dash of pepper
6-8 baby bella mushrooms (sliced)
1 can chickpeas or cannelloni (drained and rinsed)
1 large handful of collards
(deboned and roughly chopped)
1 handful of spinach
For heat add: red pepper flakes (1/2 tsp= MILD, 1 tsp= MEDIUM, 1 1/2 tsp=HOT)
Directions:
- Saute oil, sweet peppers, green onion, garlic for 3-5 minutes
- Add mushrooms and tomatoes, black beans, basil, salt and pepper. Saute until mushrooms and sweet peppers are soft and cooked (about 5 minutes).
- Add kale and cover mixture to simmer until kale wilts (about 3-5 minutes)
