Coconut Rice of the Gods

I LOVE this recipe for it’s simplicity and deliciousness that makes eating healthy easy. I hope you find the same joy!

Ingredients:

2-3 Garlic cloves (minced)

1 cup jasmine rice

1 cup water

2/3 cup of Coconut milk

1 1/2 cups of black beans 

  1. Sautee the garlic in some coconut oil or olive oil for a couple of minutes until fragrant.
  2. Add rice and mix it with the garlic and onion.
  3. Then add water and coconut milk and bring to a boil. Turn down to simmer and set timer as directed for the type of rice you’re using— approximately 13-18 minutes or until all water has been absorbed.
  4. Remove from burner and mix in black beans. Voila! You have deliciousness!
