Sweet and Spicy Breakfast Saute
Serves 2-3 Prep Time: 10 minutes Cook Time: 25 minutes
Ingredients:
olive oil
1-2 medium sweet potatoes (cubed)
1 TBSP cajun seasoning
dash of salt
dash of pepper
2 sweet peppers (chopped)
1 red onion (chopped)
3 garlic cloves (minced)
4-5 baby bella mushrooms (sliced)
1 can chickpeas (drained and rinsed)
2 large handfuls of collards (deboned and roughly chopped)
For heat add: red pepper flakes (1/2 tsp= MILD, 1 tsp= MEDIUM, 1 1/2 tsp=HOT)
Directions:
- Saute sweet potatoes, oil, cajun seasoning, salt and pepper for 15 minutes on medium heat.
- Add sweet peppers, onion, garlic, mushrooms and chickpeas. Cook for 3-5 minutes until onion is translucent.
- Add collards simmer about 3-5 minutes.
